Fresh from the Auction House
Hawaii's fresh bigeye tuna, swordfish, mahi mahi, opah, and moi are among the highest quality in the world. Owner Joey Cabell handpicks all our fish served at the Chart House Waikiki from the Honolulu Fish Auction to ensure that you are served only the best and freshest when you visit our restaurant.

Bigeye "Tuna" Ahi
This is one of the preferred species for the preparation for sashimi. With high fat content, bigeye is also among the most desirable species for grilling:

Shutome "Broadbill Swordfish"
Swordfish has a firm texture. When cooked, the flesh is tender and very mild in taste. It is ideal for grilling and prepared as sashimi.

Mahi Mahi "Dolphinfish"
This is an open ocean fish commonly known as dolphin (the fish, not the mammal). It has a delicate flavor that is almost sweet and is ideal for a variety of preparations. 

Opah "Moonfish"
Another open ocean fish, it is the most colorful of the commercial fish species available in Hawaii. The flesh is rich and fatty, and used for sashimi, broiling, and smoking. 

Moi "Threadfin"
The most desired fish of the ali'i (royalty) of old Hawaii, moi is a moist, delicate, flaky white meat with mild flavored flesh. It is ideal for a variety of preparations such as steaming or fried. Average size is 1 to 1½ pounds.
