About Us
Our restaurant was nearly destroyed in December 1976 by a fire that swept the building. The management and the employees all pitched in to rebuild the Chart House as you see it today. We are the oldest singly-owned fine dining restaurant in Hawaii. For the past 41 years, The Chart House Waikiki has been a favorite gathering place for kama ‘aina (residents) and visitors alike. THE DINING ROOM Under the watchful eye of Executive Chef Randy Manuel, auction-fresh island fish and seafood are transformed into extraordinary dishes that celebrate the tastes of Hawaiian Pacific Rim cuisine. A must-try for fish lovers is the Pan-Seared Herb Crusted ‘ Ahi (Yellowfin Tuna), served rare with Ponzu Soy Butter sauce. Those in the know about shellfish will enjoy the Live Kahuku Prawns sauteed in a spicy Szechwan Chili Oil, For the ultimate Seafood experience, there is the Crustacean Broil, a medley of Jumbo Shrimp, Ocean Scallops, Dungeness Crab and a Whole Live Maine Lobster! We feature our USDA Prime Grade Beef and our famous Roasted Prime Rib of Beef, so tender and juicy it is considered by many to be the best in Hawaii. To compliment your meal, peruse our wine “book.” With over 100 selections you’re sure to find something to heighten your dining experience. Live Hawaiian- Contemporary entertainment, award-winning drinks and lots of aloha abound nightly. Come in for our early Happy Hour specials and enjoy sunset cocktails overlooking Ala Wai Yacht Harbor. Sample a variety of pupus (appetizers) from our lounge menu, the largest in Honolulu. About Our Chef
Randy Manuel was born and raised in the Philippines. On January 12, 1996, his family moved to Hawaii to achieve better opportunities. After graduating from Farrington High School, Randy took part in various aspects of the food service industry while working his way through college. Randy graduated with high honors from Gross Bonnet Academy, a well-known culinary school here on Oahu. Since he enjoyed inventing his own recipes, Randy felt he had a gift and love for cooking. When he was not in school, he spent his evenings working at the Chart House restaurant to gain more experience in fine dining. Initially, Randy started as a prep cook and learned about the other key elements in the kitchen – - excelling in such areas as fry, pantry, sauté, lobster sauté, and broiler. Eventually, he became an assistant chef. As an assistant to the Executive Chef, Randy gained much experience managing his colleagues and what it takes to be a great team player and exceptional leader. Today, Randy is the Executive Chef of one of the original, and Hawaii’s only Chart House. He has now been apart of the Chart House Honolulu Tradition for more than 8 years.
